Mango Leather

 


Mango Leather, also known as a fruit roll up, is a dried mango treat, that is very popular with local residents here in Thailand. Making the treats is one of the ways, Siri and family, local rice farmers, keep busy in the off season. The ingredients are simple,  mangos and a fist full of salt in the large cooking pot. The mango's are peeled, processed in a blender and cooked over an outdoor wood grille for 1 hour and forty minutes after the liquid is brought to a soft boil. You just can't get much more natural than that!

The cooked mango's become thick enough to form into flat oval disks and are placed on sheets of plastic, and laid out on flat boards in the sun to become firm, then the sheets are hung over bamboo poles to finish drying. Then the finished treads are peeled off the plastic and rolled up for packaging.
